Scottish Tea Scones

In a large bowl, mix together thoroughly:

2                 cup             flour

 -       1/4     teaspoon     salt

1        -        teaspoon     baking soda

2        -        teaspoons   cream of tartar

2        -        tablespoons          sugar

Cut in:

3        -        tablespoons          soft butter

Blend with pastry blender, or rub with fingers until the particles are well-coated. When properly mixed, mixture will resemble coarse cornmeal.

Blend in:

1        -        cup             currants or raisins

Add all at once and mix to a soft consistency:

-        1/2     cup             milk

A)  DO NOT OVERMIX!
B)  Turn onto a floured board and knead very lightly, until smooth.
C)  Roll into a circle 1/2” thick. Cut into 1/8ths.
D)  Place on lightly greased cookie sheet. Brush tops with a little milk.
E)   Bake @ 425° for 10 to 12 minutes.
F)   Cool and serve with jam.

Background: This is a traditional tea time treat served in the British Isles, especially in Scotland. They are often served with clotted cream and jam.
